Fall, thanksgiving

It has been a while since my last blog post, with the high temperatures during the summer chocolate and confection making was put on hold.  Now that we are in the Fall, I am back in the kitchen and whipping up some yummy treats. Salted vanilla caramels are back in stock but a limited amount... But also chocolates!! I have been working on some beautiful chocolates with Fall and thanksgiving in mind, some shapes and colors might change in the process, the photo is a glimpse of what is to come. Boxes of 12p will also be available soon, the flavors will be: Chai tea Coffee/dulce de leche Vanilla caramel followed by a pumpkin spice caramelized white chocolate ganache and...

Easter is coming soon..

Sorry that I haven't written anything in a while... I am currently working on Easter production and finally settled on a theme for my individual chocolates. It will be High Tea in a box, using Silk Road Teas here in Victoria, BC. We have a beautiful, floral Jasmine Tea in a milk chocolate ganache and then also in milk an Earl Grey. They will be coming with bonbon that would be strawberry shortcake, so strawberry ganache, using Strawberry inspiration from Valrhona layered on top of a sour cream white chocolate ganache. And the last one will be a white chocolate cucumber ganache. Still, a few more tweaks, check out my Instagram account to see the progress for Easter products.     JASMINE...
